  • 250 g almond flour of finely grounded almonds

  • 150 g potatoe or sweet potatoe
  • Grated lemon skin
  • For decoration: pine nuts, coconut shreds or almond slivers (or any other goodie you may think about)

  1. Boil the potatoes or sweet potatores. Once they are soft, peel them (when still hot) and mash them. Let them cool down.
  2. Mix the mashed potatotes with the sugar and almond flour
  3. Add the lemon skin
  4. Mix until you have a homogenous dough. Let it rest in a closed container in the fridge for at least 2 hours.
  5. Make balls about 1" diameter or in the shape you prefer. Decorate them with the goodies and, to make them shine, paint the panellets with egg yolk.
  6. Bake for about 10 minutes or until golden at 390°F (200°C)
